Healthy Cranberry-Orange Muffins

These muffins are high in fiber and low in fat.  This is great recipe for when you have left over cranberry sauce from Thanksgiving. They taste delicious re-heated in the morning…                          

Ingredients:

3/4 natural bran

1 cup whole-wheat flour

1/2 cup sugar

1 1/2 tsp of cinnamon

1 tsp baking powder

1 tsp baking soda

1 cup cranberry sauce

1 egg or two eggs whites (for less cholesterol)

1/2 cup low-fat plain yogurt

1/4 cup vegetable oil

1 tsp orange grind

Directions:

Pre-heat oven to 400 degrees.  In a bowl, combine bran, flour, sugar, cinnamon, baking powder and baking soda; mix well.  Add cranberry sauce, egg, low fat yogurt, vegetable oil and orange rind; stir just until combined.

Spoon batter into a non-stick muffin tin.  Bake for 25 minutes or until firm to the touch.

Makes 12 muffins
