Cooking chicken “stand up” style is a healthy and easy way to enjoy roast chicken.
With fat running down the chicken and into the tray, this method of cooking is better for you as the chicken is not resting in the fat.
These chicken stands are available a most grocery stores and are lifesavers. The chicken cooks evenly and is extremely tasty!
Ingredients:
1 chicken stand
1 whole chicken (3 lbs)
2 teaspoons dry mustard
2 pieces of whole garlic
2 tablespoon of paprika
salt and pepper
2 tablespoons dried parsley
1 teaspoon vegetable oil
Directions:
Pre-heat the oven to 370 and remove the top rack in your oven and place the other two racks at the lowest level.
Clean the chicken inside and out and pat dry. Lay the chicken on a cutting board and remove any extra fat pieces from the chicken. Then cover the chicken with dry mustard on the outside only, using your hands. Salt and pepper the chicken inside and out, to your liking. Sprinkle the chicken with parley and paprika as well.
Then place the chicken on the stand, which should be placed in a square dish. At the bottom of the dish place two cloves of un-peeled garlic. Using less than a teaspoon of vegetable oil, drizzle the oil from the top of the chicken. This helps to brown the chicken as well.
Roast for 1 ½ hours and be sure to check that the juices run clear when the cooking is done!
